MAY 19 -Crab Chirashi Two days before the election, we traveled seven hours to the town of Masinloc in Zambales to listen to complaints of fishermen who had been harassed out of Scarborough Shoal by armed Chinese coast guards. Returning to Manila that night, we covered several political rallies of presidential and senatorial candidates. Endless consultations with political and economic analysts took up the next couple of days. And on Election Day, we went to polling precincts in Pampanga, Bulacan, Quezon City, Tondo, Intramuros, Malate, Cavite, Laguna, and Batangas to talk to as many voters as possible from all walks of life. After the election, we were kept on our toes (and tied to our laptops) keeping track of the vote count released by the Parish Pastoral Council for Responsible Voting (PPCRV). Once it became apparent that Davao City mayor Rody Duterte was going to win by a landslide, it was time to scramble for feature articles and personality profiles on the would-be president. An investigative report I did for Houston TV station KHOU 13 years ago provided the lead for an exclusive New York Times story, which traced Duterte’s personal hatred for the US to American officials’ involvement in the disappearance of a suspected American bomber from a Davao hospital.

Amid all this activity and the suspense-filled battle for the vice presidential slot came the call for what turned out to be one of the most memorable hotel buffets in this part of the world—at the Nobu Manila in City of Dreams.

Chef Akihisa Kawai cuts a 50-kilo tuna

A huge whole tuna on a bed of crushed ice greeted guests. Its large eyes were so luminous it seemed alive and ready to jump out.

Head sushi chef Akihisa Kawai wielded an especially handcrafted knife to cut up the tuna, chilled, never frozen, flown in hours ago from General Santos City.

Two men were needed to lift it. Despite its size, the tuna was considered a baby, too young and too small to produce the fat-laden toro or tuna belly considered by many as the best part of the fish. Toro-producing tuna is imported from colder waters.

Chef Nobu Matsuhisa himself was in Manila recently, inspiring the entire staff, Nobu fans, and lovers of Japanese cuisine who recognize that Nobu represents not just another Japanese restaurant. It is a state of mind.

Every little thing counts.

The rare baby octopus is still writhing, seconds before hitting the hot teppanyaki table grill. Fresh shiitake mushrooms are uniform in size and color, as are the green asparagus tips.

Whole sea bass is kippered, boned, seasoned with a layer of fresh herbs, and grilled whole. French oysters are served freshly shucked with a choice of five Nobu sauces.

The handcut, thick soba, looking plain and unadorned, was surprisingly rich with layers of Oriental flavors.

On the suggestion of restaurant manager Kenny Hernandez, we enjoyed Wagyu short ribs, meltingly tender and with deep beef flavor minus the thready texture of ribs.

The Nobu Sunday brunch is not just another hotel meal, but an experience that should set the standard that all hotel buffets should aspire for.
