CABALEN ROBINSON PLACE PUSHES ERMITA REVIVAL
Manila, Dec. 9, 1997 - The opening at the new giant mall Robinson Place of the very popular Cabalen Restaurant brings into the Ermita district world-famous Pampango home cooking in a 1950s setting.
The new Cabalen veers away from the predictably ethnic look of many restaurants, where Pinoy culture is depicted as nipa huts and bamboo eating utensils. UP-trained architect Popi Laudico gave Cabalen Filipino touches but with a very 90s global ambience.
Maritel Nievera, Cabalen president and moving spirit, is happy to be part of the renewal of the old Ermita district, after having opened in SM Megamall, Makati's Quad, And on West Avenue in Quezon City.
"With the new Cabalen, we hope to hit the A to C markets," Nievera said.
